Bruschetta
: From the Italian bruscare meaning “to roast over coals,” this traditional garlic bread is made by rubbing slices of toasted bread with garlic cloves, then drizzling the bread with extra-virgin olive oil.
Waverley Root and Marcella Hazan trace the origins of bruschetta to ancient Rome. According to Root, ancient Romans called bruschetta clustrum or crustulum. An inscription found in the Sabine city of Cures documents that clustrum was distributed to people together with mulsum on important holidays like Saturnalia.
A popular dish is bruschetta with tomatoes; one recipe popular outside Italy involves basil, fresh tomato, garlic and onion or mozzarella.

How to Make Bruschetta
For this recipe, you can really taste the difference when you use ripe tomatoes and fresh (not dried) basil; Use the best olive oil and balsamic vinegar you can buy, and hand-grated Parmesan cheese instead of pre-packaged grated cheese.
1) Chop tomatoes and place in a medium size bowl.
2) Add the balance ingredients (except for the baguette) to the bowl and set aside while you prepare the bread.
3) Slice the bread at an angle, dividing into equal sections of 1/2 or 3/4 inches. Cutting the bread diagonally will give you more space for the toppings.
4) Smear the bread slices with a little EVOO and Grill using the grill pan or Toast using a toaster. If using Herbed Garlic butter, smear a little after the bread has been grilled / toasted.
5) Place bread on a serving platter and top with tomato mixture.
